Ingredients:
- 2 packs Moomoos Australian Lamb Chops
- Marinade ingredients:
- 2 tablespoons ground coffee
- 1 teaspoon ground ginger
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 2 teaspoons ground coriander
- 1 tablespoon mustard
- 2 tablespoons molasses
- 2 tablespoons olive oil
- Sauce Ingredients
- 3 garlic cloves, minced
- 2 tablespoons vinegar
- Peel of 1 lime
- 1 tablespoon fresh mint leaves, finely chopped
- 25g dark chocolate
- 1/4 cup boiling water
- Salt & pepper
Recipe Instructions
- Use a kitchen paper to dry the defrosted lamb chops.
- Mix all marinade ingredients, then pour them over the lamb chops and let them marinate for 2 hours up to overnight.
- Heat a large pan or a grill, drizzle a little olive oil, and grill the lamb chops on both sides until browned. You may do it in batches to avoid overcrowding the pan.
- In the meantime, preheat the oven to 180C. Do not dispose of the leftover marinade.
- Place the grilled lamb chops in the oven for around 20 minutes, until cooked through and tender.
- Use the same pan for the sauce. Pan-fry garlic, then add the rest of the ingredients along with the leftover marinade. Stir well to combine and let it simmer on low/medium heat for a couple of minutes.
- Serve the lamb chops hot next to the sauce and some roasted vegetables
