Coffee Spiced Lamb Chops

Cooking Time: 45 minutes + marination time     Serves: 6 people 

You will need​: 

Special Equipment:

  • Grill or skillet
  • Mixing bowls


  • 2 packs Moomoos Australian Lamb Chops
  • Marinade ingredients:
    • 2 tablespoons ground coffee
    • 1 teaspoon ground ginger
    • 1 teaspoon black pepper
    • 1 teaspoon paprika
    • 2 teaspoons ground coriander
    • 1 tablespoon mustard
    • 2 tablespoons molasses
    • 2 tablespoons olive oil
  • Sauce Ingredients
    • 3 garlic cloves, minced
    • 2 tablespoons vinegar
    • Peel of 1 lime
    • 1 tablespoon fresh mint leaves, finely chopped
    • 25g dark chocolate
    • 1/4 cup boiling water
    • Salt & pepper

Recipe Instructions​

  1. Use a kitchen paper to dry the defrosted lamb chops.
  2. Mix all marinade ingredients, then pour them over the lamb chops and let them marinate for 2 hours up to overnight.
  3. Heat a large pan or a grill, drizzle a little olive oil, and grill the lamb chops on both sides until browned. You may do it in batches to avoid overcrowding the pan.
  4. In the meantime, preheat the oven to 180C. Do not dispose of the leftover marinade.
  5. Place the grilled lamb chops in the oven for around 20 minutes, until cooked through and tender.
  6. Use the same pan for the sauce. Pan-fry garlic, then add the rest of the ingredients along with the leftover marinade. Stir well to combine and let it simmer on low/medium heat for a couple of minutes.
  7. Serve the lamb chops hot next to the sauce and some roasted vegetables
