Tajin Bamya and Meat Cubes

Cooking Time: 1 hour 15 minutes       Serves: 4-6 people 

You will need​: 

Special Equipment:

  • Tajeen or large skillet
  • Separate pan for Tasha

Ingredients:

  • 1 tablespoon ghee
  • 450 grams of meat cubes
  • 1 Large onion chopped
  • 2 Chopped garlic clove
  • 1 green pepper
  • 1 A bag of okra 400 grams
  • 1 1 / 2 tablespoon tomato sauce
  • 1 / 4 Concentrated tomato juice
  • 3 4/2 cups of Water
  • ½ lemon juice
  • Salt and pepper

Tasha:

  • 2 - 3 tablespoons Oil
  • 3 tablespoons of green coriander
  • 2 Chopped garlic cloves
  • 1 Chili

For serving:

  • Lemon Juice

Recipe Instructions​

  1. In a large tajeen or skillet, heat the ghee over medium heat. Add the meat cubes and cook until browned on all sides. Remove the meat from the tajeen and set aside.
  2. In the same tajeen, add the chopped onion, garlic, and green pepper. Sauté until the vegetables are softened, about 5 minutes.
  3. Add the tomato sauce and concentrated tomato juice to the tajeen. Stir to combine with the vegetables.
  4. Return the browned meat cubes to the tajeen. Add the water and bring the mixture to a simmer.
  5. Cover the tajeen and let it simmer over low heat for about 1 hour, or until the meat is tender.
  6. Once the meat is tender, add the okra to the tajeen. Cover and simmer for an additional 15-20 minutes, or until the okra is cooked through and tender.
  7. Season with salt and pepper to taste.
  8. Prepare the tasha. In a separate pan, heat the oil over medium heat. Add the chopped green coriander, garlic, and chili. Cook for 2-3 minutes. Add to tajeen
  9. Serve the tajeen, with additional lemon juice.
  10. Enjoy!
